The Organic Gaia 1.1 came to be at the Waterford Distillery back in 2016. It’s certified by the Organic Trust, having been made using locally-grown Irish barley. There’s plenty of pepper and oak in the mouth, with just a hint of fortified wine creeping in at the finish.
