Tasting Notes and Characteristics:A whisper of ripe plum and smoke comes alive on the nose, inviting you to think of autumn orchards, rich fruit, and a warmth that settles in the chest as you sip Stara Sokolova Slivovitz. This Serbian plum brandy is crafted from fermented plums, then double-distilled in traditional copper pot stills and rested to mellow its edge, delivering a smooth, clear palate with orchard-fresh fruit, almond, and a hint of sweetness that lingers. ABV XX.XX% (0.40% vol) so it stays approachable, yet carries a quiet depth that makes it feel both rustic and refined. Pairs beautifully with Duck or Cheese, where the fruit brightness cuts through savory richness and the citrusy notes lift the cheese’s acidity.Producer Information: Stara SokolovaStara Sokolova sits in the Danubian plains of northern Bulgaria, where a small team founded the estate in the early 2000s with the aim of reviving local grape heritage and expressing a clean, site-driven wine. The founders’ ethos centers on hands-off farming, minimal sulphur, and native yeasts, allowing chalky soils and brisk river air to shape expressive whites and nuanced reds without artifice. The production philosophy favors low-intervention methods, careful barrel maturation, and precision climate control to preserve freshness and terroir, a stance that gives their wines a distinctly Balkan character anchored in place. Beyond their signature bottlings, Stara Sokolova also crafts a lineage of regional spirits and beverages, including rakia-inspired fruit brandies and a small-batch vermouth, each reflecting the same tie to local crops and artisanal craft that defines the winery’s identity.
