Balcones Baby Blue Blue Corn Whisky
Straight Corn Whisky | 46% ABV | 92 Proof | 750mL | Waco, Texas | 100% Texas-Grown Roasted Blue Corn | Used Oak Casks | Non-Chill Filtered | No Added Color
Process & Profile
Balcones Baby Blue Blue Corn Whisky is a distinctive Texas straight corn whisky made from 100% Texas-grown roasted blue corn. Produced by Balcones Distilling in Waco, Texas, Baby Blue helped introduce a uniquely Southwestern approach to American corn whisky and was the first Texas whisky released to market since Prohibition.
Rather than using conventional yellow or white corn, Balcones builds Baby Blue around roasted blue corn, a grain prized for its rich, oily texture and naturally nutty flavor. Maturation in used oak casks allows the corn itself to remain prominent while adding caramel, vanilla, spice, and gentle oak complexity.
Bottled at 46% ABV (92 proof) without chill filtration or added coloring, Baby Blue retains a full texture and expressive grain character. Its combination of caramel corn, melted butter, fresh bread, tropical fruit, brown sugar, sweet tea, cinnamon, and subtle smoked chile creates a style that stands apart from both traditional bourbon and conventional corn whisky.
