The Jean Fillioux XO So Elegantissime Cognac is a 100% Grande Champagne Cognac that’s well worthy of its name, ‘Elegantissime’. Produced by Cellar Master, Pascal J. Fillioux and his son, Christophe, this is a wonderfully complex XO quality Cognac to enjoy.
Thanks to long aging in French oak barrels, the Cognacs from the Domaine de la Pouyade, home of Jean Fillioux Cognac acquire incredibly complex aroma and flavor.
The estate itself is based at the very heart of the Premier Cru, also known as the Grande Champagne. It is named for its ability to produce very fine Cognacs with lengthy finishes, and the ability to age exceptionally well. This is due to the remarkable chalk content in the soil, which dates back to the Jurassic period.
Over millions of years, fossilization within the soil has created a very fine, limestone-rich soil which is key in creating the best Cognac.
That combined with a unique maritime climate makes for very special Cognac indeed.
Expect a rich and complex floral palate, with the scent of spring that develops into sweet, spicy notes of coriander and cardamom towards the end.
