A particularly interesting indie bottling here from That Boutique-y Spirits Company, produced at Bristol’s very own Circumstance Distillery. The team has created some marvellously innovative spirits, with a focus of organic grains and long fermentations. For this expression, Circumstance has used a wheat spirit, but intriguingly, it’s been aged in a drum with oak spindles suspended in the spirit for 40 days.
