Tasting Notes and Characteristics:The first sip of Barrell Bourbon Dovetail wraps you in a lush tapestry of candied fig, molasses, and toasted oak, instantly evoking the warmth of a fireside evening. Crafted in the United States with an ABV of 62.35%, this bourbon is meticulously blended and finished in rum, port, and cabernet barrels to coax out layers of dried fruit, caramelized sugar, and a whisper of spice. Its bold structure stands up beautifully to smoked brisket while its velvety sweetness finds harmony with dark chocolate. Each glass delivers a complex yet inviting experience that lingers long after the last drop.Producer Information: Barrell Craft SpiritsBarrell Craft Spirits, founded in 2013 by Joe Beatrice in Louisville, Kentucky, has carved a distinct niche in the American whiskey landscape through its commitment to sourcing and blending exceptional casks from across the United States. Rooted firmly in Kentucky’s bourbon heartland, Barrell eschews traditional distillation on-site and instead focuses on curating and marrying barrels from various distilleries to create unique small-batch releases. Their philosophy centers on transparency and innovation, often bottling at cask strength without chill filtration to preserve each spirit’s character. Beyond their acclaimed bourbon blends, Barrell also produces rye whiskeys such as Seagrass and Dovetail—each highlighting creative barrel finishes—and has expanded into rum with their Barrell Rum line, further demonstrating their expertise in blending across categories while maintaining a focus on quality and regional expression.
